2 egg whites
450g icing sugar, sifted
2 tsp lemon juice
1. Whisk the egg whites until they are frothy
2. Gradually add the icing sugar, one tbsp at a time
3. Add the lemon juice and continue to beat until the mixture is thick enough to stand in peaks
4. Use it to cover cakes, or pipe it for decoration. Add food colouring, if desired
